First Class is the usual choice. There is rarely a need for tracking, and a plainly posted letter reads as what it is.
Getting the address right
You can write to your MP at their constituency office or at the House of Commons, London SW1A 0AA. Look up who your MP is on the parliament.uk website before you send it.
